As a country whose food is almost a religion, we celebrate everything with food. No pumpkin stuff but things like pannelets, buñuelos, chestnuts and especially Huesos de Santos. Saints Bones. The most typical dessert for this time of the year.
The first ones presumebly appeared in the XVII century imitating human bones. Many desserts in Spain are made using almonds. Also in this case.
Almond paste (marcipan) filled with different things like egg, cream, chocolate and so on.
